Just like every football team needs a game plan, every successful tailgate starts with choosing the right menu. The first question when planning your food isn't "what sounds good?" it's "how many people are you feeding?"

For smaller gatherings, crowd favorites like smoked wings, tri-tip, and whole chicken are easy to prepare and get on the table quickly. If you're hosting 15 to 25 guests, pork butt, ribs, and smoked sausage offer big flavor with plenty of servings. And if you're feeding an all-star lineup of friends and family, brisket remains the undisputed heavyweight champion of game day BBQ.
The Ultimate Game Day Meats
Remember, while football games may be won in four quarters, great barbecue is often won days before kickoff. So let’s get into the pre-game planning phase!
Game Day Timeline
Cooking for a crowd can be intimidating, but don’t worry, our team of chefs has you covered. Just like big cooking days like Thanksgiving, Christmas, and Easter, you can’t really get everything done in just one day. For Game Day, it's all about planning. So don’t hit up the grocery store on a Friday night at 9pm to buy a brisket for Game Day. Instead, shop earlier in the week, or even weeks ahead of time. Make friends with your butcher and ask for advice. When beef is boxed at the meat packer, the “packed date” is printed on the label. It is perfectly fine to let the brisket age in the Cryovac for 30-45 days. The enzymes in the package do wonders for flavor and texture. After dinner on Thursday, it’s time to trim the brisket. Then add it back to the fridge until after work Friday when you can inject and season it up. For pork or ribs or even chicken, you can follow the same general process. The only thing you need to consider next is what time you want to eat and follow the suggested guides for Brisket, Pork Butt, and Ribs.



Serving Solutions

It’s easy, recteq’s full-size and half-size steamer pans are a great way to make sure that you have plenty of food for all of your friends and family. Generally speaking, a half size foil pan of a side like mac & cheese, potato salad, or your favorite grilled corn elote salad will feed about 18-20 hungry adults. As 4 of these pans will easily fit in large warming boxes, it makes transportation really convenient. If you have a bigger crowd, the full-size steamer pans will feed 35-40 adults, and you can fit 2 of them in the large warming box. They work great for either hot or cold applications plus, they are disposable, so no need to stop to clean and run the risk of missing your team's touchdown.
Get Ahead of the Game (Tailgating Tips):
Getting ahead for Game Day is absolutely the way to go and with a few tips and tricks it only gets better when reheated.
- For Pulled Pork: Cook like always, wrap, and get to probe tender, but here’s a vital secret: eave it wrapped and allow it to cool down slowly on the counter. As the pork butt cools down, it will have a vacuum effect, and the pork will suck back up the juices in the foil wrap. Once the pork is cool to the touch, (could take 90 minutes), begin to carefully shred. If there is any leftover juice in the pan, gently fold it back in. Add to a vacuum seal bag and seal carefully. (Make sure it’s completely cold when you do this. Even a little steam can break the pump). This locks in all the juice for very tender results!
- For Brisket: Follow similar steps, but add some of that beef au jus into the bag. This can be tricky with a pump-driven food saver machine so here is the pro tip. Pour off some of that beef au jus into a silicone ice cube tray and make yourself a handful of Beef au Jus cubes. That way, when your brisket is cooled, sliced, and added to the vacuum sealable bag, you can toss a few frozen beef juice cubes in there. Once you are ready to reheat, they will melt and baste your brisket to juicy perfection.
- Reheating: Place the bag in a full-size steamer pan with a bit of water and cook at 300ºF-325ºF until the contents of the bag are above 165ºF. Don’t worry, the bag won’t melt and the water helps everything heat faster.
This allows you to get ahead of game day. In the off season, you can get ahead by filling the freezer with perfectly prepped food for upcoming games. You can take these in a cooler on ice and reheat at the tailgate or even gift to a friend or family that might need a meal in a pinch.
Sides that Travel Well
Baked Beans, Mac & Cheese, Corn Casserole/Puddings, basically anything heavy, saucy, or high-volume will hold the heat better. (For example, two pans stay hot better than one). Make sure everything is as hot as possible before packing into resting boxes.
