Tender, juicy pork collar is infused with a burst of apple juice and recteq's savory Pork Injection, then slow smoked for BBQ perfection.

Instructions

  • Step 1: Prepare injection by combining the recteq Pork Injection, apple juice, Tiffany's Punchy Peach Glaze, and maple syrup in a shaker bottle.
  • Step 2: Place the pork collar in a shallow baking dish and inject the pork with the prepared injection mix. Place the pork collar in the fridge and allow to marinate for 4-6 hours.
  • Step 3: Preheat the recteq to 275℉.
  • Step 4: Remove the pork from the fridge and season liberally with the recteq Academy Pork Rub. Place on the recteq for 3.5 hours until the color is nice and dark and the internal temp is around 165℉.
  • Step 5: Pull 2 sheets of foil about 4x times as long as the pork collar, lay the sheets on top of each other and place the pork collar in the middle. Add Glaze ingredients and wrap the pork up tightly, being careful to not puncture the foil. Add to a shallow foil pan if needed.
  • Step 6: Add the pork back to the recteq and continue cooking for 1.5 hours or until tender, about 200℉ internal.
  • Step 7: Allow the pork to rest before slicing or shredding, mixing in the wrap juices as needed for more moisture.
