X-Fire Ultimate Cheese Skirt Burger

Loaded with cheese, this classic burger is everything you need from your summer cookout and the X-Fire makes it easy!

Instructions

  • Step 1: Burning the Ultimate Blend Pellets, turn X-Fire to grill mode and both knobs to high with sear control off. 
  • Step 2: Form beef into 1/3 pound patties and season evenly with Ben’s Heffer Dust.
  • Step 3: Place cast iron skillet on the right side of the grill and adjust sear control to low.
  • Step 4: Place burger patties on the left hand side of the grill and cook for 8-10 minutes until desired doneness is reached. 
  • Step 5: Top patties with American cheese then remove from X-fire and set aside.
  • Step 6: Add bacon to cast iron skillet and season with a little Ben’s Heffer Dust. Cook bacon 3-5 minutes until desired doneness. Remove bacon and place on paper towels to drain oil. 
  • Step 7: Add eggs to cast iron skillet and cook 2-3 minutes a side. 
  • Step 8: Wipe out skillet and add 1/2-3/4 cup of shredded cheddar and mozzarella mix.
  • Step 9: Allow cheese to melt and cook until solid enough to flip with spatula. Flip in skillet.
  • Step 10: Add buns to top warming rack to toast for a minute or two. 
  • Step 11: Add bun top to cheese. Once you can scrape the cheese off the skillet, flip it open face onto your serving plate.
  • Step 12: Build your burger by placing the bottom bun down. Add your favorite burger sauce. (We used Harry's Secret Sweet Sauce.) Add lettuce, onion, tomato, bacon, then egg.
  • Step 13: Place your cheese skirt top bun on top to complete burger and slice immediately to get that ooey gooey egg yolk to bust for extra flavor.
