Instructions

  • Step 1: Preheat recteq to 400°F and let come up to temp. While recteq is heating up, add beef, sausage, Ben's Heffer Dust, Chef Greg's 4 Letter Rub, garlic paste, onion, and egg to large mixing bowl and mix until everything is well-combined.
  • Step 2: Roll meat mixture into 1 inch meatballs, place them on Mesh Cooking Mat, and place in recteq. Bake for 12-15 minutes. Remove from recteq and allow to cool for 20 minutes.
  • Step 3: Take biscuits out of can and cut each in half. Take each half and roll it out into a 3 inch circle. Place meatball in dough, top with a slice of cheese. Seal dough by crimping edges together.
  • Step 4: Take strip of bacon, wrap around dough and secure with toothpick. Place dough on Mesh Cooking Mat and place in recteq. Bake for 20 minutes or until dough is GBD (golden, brown, delicious) and bacon is crisp.

Chef Pairings

Have a little fun with this appetizer by adding a variety of cube cheeses, cherry tomatoes, and gherkin pickles on toothpicks to your serving platter. For dipping sauces, think: mayo, BBQ sauce, and Thousand Island Dressing.
