Asian Garlic & Ginger Meatballs

Smoky, juicy meatballs infused with ginger, garlic, and lemongrass are cooked on the recteq and finished in a bold, sweet-heat glaze.
Instructions
- Step 1: Burning the recteq Ultimate Blend Pellets, preheat your recteq to 375°F.
- Step 2: In the mixing bowl add: ground beef, ground pork, ginger, garlic, lemongrass, Jody's Asian Persuasion, and Chef John's Soul Powder. Mix well until all ingredients are well combined.
- Step 3: Crack eggs and scramble, add to meat mixture, and mix well. Grate onion into meat mixture and mix well.
- Step 4: Form ground meat into balls and place on recteq Mesh Cooking Mat. Place recteq Mesh Cooking Mat on recteq and cook meatballs to an internal temp of 165°F.
- Step 5: While meatballs are cooking, in a sauce pot add: Mey Poy Sauce, Sriracha, Jody's Asian Persuasion, and Hoisin. Whisk together and bring to a simmer.
- Step 6: Once Meatballs are at an internal temp of 165°F, remove from recteq and mix with sauce. Let rest for 5 minutes before serving.
