Pesto Crusted Roasted Salmon

This lovely Pistachio Pesto Crusted Salmon is as beautiful as it is delicious! Once you've made this recipe once, you'll put it into your regular meal rotation for sure.
Instructions
- Step 1: Preheat recteq to 375°F.
- Step 2: Using a sharp knife, slice into the salmon on a diagonal, about 2/3rds through the fish.
- Step 3: Season the top of the salmon with Chef Greg's 4 Letter Rub and Colden's Freakin' Greek Rub.
- Step 4: Spoon the pesto over the fish and smear it into all the cuts that you made previously.
- Step 5: Place the salmon filet on a Mesh Cooking Mat, add to the recteq, and cook for 24-30 minutes, until 130°F Internal Temperature is reached.
- Step 6: Allow the fish to rest for a few minutes before serving.
