This lovely Pistachio Pesto Crusted Salmon is as beautiful as it is delicious! Once you've made this recipe once, you'll put it into your regular meal rotation for sure.

Instructions

  • Step 1: Preheat recteq to 375°F.
  • Step 2: Using a sharp knife, slice into the salmon on a diagonal, about 2/3rds through the fish.
  • Step 3: Season the top of the salmon with Chef Greg's 4 Letter Rub and Colden's Freakin' Greek Rub.
  • Step 4: Spoon the pesto over the fish and smear it into all the cuts that you made previously.
  • Step 5: Place the salmon filet on a Mesh Cooking Mat, add to the recteq, and cook for 24-30 minutes, until 130°F Internal Temperature is reached.
  • Step 6: Allow the fish to rest for a few minutes before serving.
