These tasty Buffalo Chicken Waffle Sliders are the best way to wrap a hectic day with an easy meal.

Instructions

  • Step 1: Burning the maple pellets, preheat recteq to 375°F.
  • Step 2: Season chicken tenders evenly with Ron's Screamin' Pig Rub and Chef Greg's 4 Letter Rub.
  • Step 3: Place the seasoned chicken tenders evenly on the Mesh Cooking Mat and place on recteq. Cook for 20-30 minutes or until 165ºF internal is reached.”
  • Step 4: Prepare buffalo sauce by combining hot sauce and melted butter. Stir well and pour on top of chicken fingers.
  • Step 5: Once the chicken is cooked and outside is firm, toss the tenders in buffalo sauce until well coated. Remove and place on wire rack.
  • Step 6: Prepare the bleu cheese sauce by combining mayonnaise, sour cream, crumbled bleu cheese, lemon juice, and Ray's Loco Gringo Rub in a medium bowl. Mix until well combined.
  • Step 7: Toast mini waffles in recteq for 2-3 minutes until heated throughout. Lay out mini waffles in pairs. Add a buffalo chicken tender, then drizzle with bleu cheese sauce.
  • Step 8: Top with paired waffle piece. Secure with a toothpick, top with drizzle of maple syrup and serve immediately.
