Pineapple Chicken will make a striking centerpiece for your summer meals!

Instructions

  • Step 1: Burning the cherry pellets, preheat recteq to 325ºF.
  • Step 2: To prep the pineapple as a chicken holder, first cut off the top, then remove the good pineapple meat 3/4 of the way down, leaving the core attached to the intact bottom.
  • Step 3: Thoroughly mix recteq injection with chicken broth, and inject chicken evenly until fully hydrated. Allow chicken to rest in refrigerator for at least a couple hours to let injection penetrate.
  • Step 4: Season chicken evenly with Jody's Asian Persuasion Rub and place on pineapple holder. Should look like a beer can chicken.
  • Step 5: Place in recteq and cook until 160ºF internal is reached in breast. Baste with pineapple glaze for 15 minutes and remove from recteq. Let rest 30 minutes before slicing.
