Rib Meat Sliders

These smoky rib sliders combine chopped rib meat griddled in butter and sweet BBQ sauce with a tangy homemade slaw.
Instructions
- Step 1: Start your SmokeStone to Med High and let it warm up for 10 minutes.
- Step 2: While the griddle heats up, take the bones out of the ribs. Cold leftover ribs are super easy to de-bone. After you have the bones and tendons removed, chop the rib meat up into small pieces.
- Step 3: Add the mayo, white vinegar, buttermilk, lemon juice, and the minced onions to a medium size mixing bowl. Mix well, add the shredded cole slaw mix, and combine. Add the salt and pepper to taste and set aside.
- Step 4: Place the 4 tablespoons of butter onto the griddle and spread it around. Lay the chopped rib meat over the butter and let it cook for 2 minutes.
- Step 5: Using a large slicing knife, cut the rolls almost in half (without fully separating) and set aside.
- Step 6: Toss the rib meat and drizzle with Harry's Secret Sweet Sauce. Let this cook for another 3-4 minutes.
- Step 7: Place the rib meat onto the bottom of the rolls. Drizzle with some more bbq sauce and then top that with the cole slaw. Place the top of the rolls over the cole slaw and cut into individual sliders. Enjoy!
