Sizzling chorizo is cooked with pico de gallo, bold spices, and melted Oaxaca cheese on the recteq for a hot, bubbly skillet dip.
Instructions
- Step 1: Preheat recteq X-Fire Pro to high with a Cast Iron Sizzle pan.
- Step 2: Add the chorizo and cook for 3-4 minutes and cooked through, do not drain the grease.
- Step 3: Add the Pico de Gallo, Chef Greg's 4 Letter Rub, and the Ray's Loco Gringo Rub, cook for 2 minutes .
- Step 4: Add the shredded Oaxaca cheese and cook until it's well-melted and the edges are slightly crisp.
- Step 5: Remove from the recteq and top with chopped cilantro and a little bit of pico de gallo.
- Step 6: Serve immediately with warm corn chips, warmed tortillas or even top your favorite tacos
