Smoked Tri-Tip

Instructions
- Step 1: Preheat recteq to 250°F and place the Sear Kit on the right side of the grill, flat side up.
- Step 2: In a small mixing bowl: add Chef Greg's 4 Letter Rub, Ben's Heffer Dust, rosemary, and kosher salt. Mix well.
- Step 3: Coat both sides of the tri-tip with olive oil and then the rub.
- Step 4: Place on the recteq, fat side up.
- Step 5: Cook to an internal temp of 130°F. (About 1 hour)
- Step 6: Remove tri-tip and wrap in foil, then increase recteq temp to 400°F.
- Step 7: Place tri-tip onto the Sear Kit and sear each side for 4 minutes.
- Step 8: Allow the meat to rest for 15 minutes and slice across the grain to serve.
