  • 5 pound(s) Ground Lamb
  • 1 pound(s) Onion, minced
  • 1 each Carrot, minced
  • 1/2 pound(s) Celery, minced
  • 3 tablespoon(s) Garlic, chopped
  • 2 tablespoon(s) Thyme, chopped
  • 2 tablespoon(s) Rosemary, chopped
  • 2 cup(s) Green Peas
  • 1/2 cup(s) Worcestershire
  • 1 tablespoon(s) Tomato Paste
  • 32 ounce(s) Red Wine
  • 3 ounce(s) Chicken Stock

Mashed Potatoes

  • 5 pound(s) Idaho Potatos
  • 2 cup(s) Heavy Cream
  • 1/2 pound(s) Butter
  • 4 each Egg Yolks
  • 1 tablespoon(s) Salt
  • 1/2 tablespoon(s) Black Pepper
  • 1/2 cup(s) Parmesan Cheese

Tools Needed

  • Step 1: Preheat recteq to 400ºF with an enameled cast iron Dutch oven. Saute the ground lamb until well browned, draining grease if necessary.
  • Step 2: Add the minced carrot, celery, and onion; cook until the vegetables are tender and the liquid has evaporated.
  • Step 3: Add the garlic, herbs, and tomato paste. Cook for 3-5 minutes.
  • Step 4: Add the red wine and allow to simmer until the liquid has almost fully evaporated.
  • Step 5: Add the chicken stock and allow to simmer until the liquid has almost fully evaporated.
  • Step 6: Taste the mixture and adjust salt and pepper to taste as needed.
  • Step 7: Transfer the mixture to a greased baking dish, cover with a layer of the mashed potatoes.
  • Step 8: Top the potatoes with parmesan cheese and cook at 350℉ until golden brown (30-35 minutes).
