The seasoning, the smoke, the perfect presentation... Revolver Prime Rib is a "must-recteq immediately" recipe!

Instructions

  • Step 1: Burning the Oak Blend Pellets, preheat recteq to 300°F.
  • Step 2: In a small bowl, mix both Holiday Celebration Rubs together. Coat rib roast with oil and season evenly with rub mixture.
  • Step 3: Place roast flat side down on cutting board, vertically stand bones around the roast and secure with butcher's twine, making sure twine is snug.
  • Step 4: After securing bones to roast, place in roasting pan with wire rack inside. Make sure the pan is deep enough for rendered fat. 
  • Step 5: Place in recteq and cook until an internal temperature of 110°F has been reached. About 2-3 hours.
  • Step 6: Remove and discard excess fat drippings in pan. 
  • Step 7: Add 1/2 cup of water to pan to keep marrow from smoking at high temperatures.
  • Step 8: Turn recteq to 550°F and place roast back inside. Continue cooking until an internal temperature of 130°F has been reached.
  • Step 9: Remove and let rest 20-30 minutes. Remove twine and cut roast as desired. Serve with bone marrow and crusty baguette slices.
