Reverse Seared Cowboy Ribeye

Instructions
- Step 1: Preheat recteq to 225ºF.
- Step 2: Liberally apply Ben's Heffer Dust and let rest for 10-15 minutes at room temperature.
- Step 3: Place the steaks on the recteq and smoke at 225ºF until reaching an internal temperature of 120ºF.
- Step 4: Remove the steaks and increase temperature to 500ºF+ with a Sear Kit.
- Step 5: Using the Sear Kit, grill for about 3 minutes per side.
- Step 6: Let the steaks rest for 5-10 minutes before cutting.
