These Spicy Bat Wings are smoky, jet-black chicken wings marinated overnight in a fiery blend of chili paste, soy, honey, and espresso rub, then wood-fired to crispy, perfection on the recteq.
Instructions
- Step 1: Burning the cherry pellets, preheat recteq to 400°F.
- Step 2: In a medium size mixing bowl add olive oil, soy sauce, Stevie’s Habanero Honey, sriracha, minced garlic, Jody’s Asian Persuasion Rub, and 5 drops of black food coloring. Mix well.
- Step 3: Add 6 whole chicken wings to zip top bag and pour liquid over the chicken, massage well, and marinate overnight in refrigerator.
- Step 4: Remove wings and pat dry with paper towels.
- Step 5: Use toothpicks to prevent the wings from compressing. Place them in between drum and flat, acting like a brace.
- Step 6: Season evenly with Ron’s Kickin' Espresso Joe Rub and place wings on Mesh Cooking Mat. Place wings in refrigerator for 30-60 minutes to dry out skin.
- Step 7: Add to recteq and cook until 180°F internal temperature.
- Step 8: Remember to remove the toothpicks before serving. Serve with a spooky spicy sauce or inject with buffalo sauce for an added effect and kick!
