These smoky Buffalo chicken meatballs are packed with bold flavor, featuring a blend of Buffalo Butter Rub, parmesan, and Panko, then finished with a zesty honey-Buffalo glaze right off the recteq.
Instructions
- Step 1: Burning the recteq Ultimate Blend Pellets, preheat your recteq to 225°F.
- Step 2: In a large mixing bowl add chicken, recteq Buffalo Butter Rub, and Chef Greg's 4 Letter Rub, and mix well.
- Step 3: Next add eggs, parmesan, and Panko. Mix well until all ingredients are well incorporated.
- Step 4: Roll chicken into 3 ounce balls and place on Mesh Cooking Mat. Place recteq Mesh Cooking Mat in recteq and allow to cook until the internal temp of meatballs is 165°F.
- Step 5: In a medium size sauce pan add: Buffalo sauce, butter, Adam's Southern Citrus Honey, and Worcestershire. Place in recteq and bring to a simmer, whisking often.
- Step 6: When sauce is ready, remove from recteq and allow to rest. When meatballs have reached an internal temp of 165°F, remove from recteq and toss in the sauce.
- Step 7: Top with Bleu Cheese and serve.
