Holiday Candied Yams

These aren't your every day sweet potatoes, these are incredible Holiday Candied Yams and a little smoky goodness makes all the difference. Cinnamon, Nutmeg, and Heavy Cream make this a little more like a dessert than just a regular side. Add some sweetness to your holiday meals with recteq.
Instructions
- Step 1: Preheat recteq to 375°F and place a medium sauce pan inside; letting both come up to temp.
- Step 2: Wrap sweet potatoes in foil and place in recteq until they are fork tender (about 35-45 minutes). While potatoes are cooking, add milk, cream, brown sugar, and vanilla to sauce pot. Let simmer for 5 minutes to dissolve the sugar, whisking constantly.
- Step 3: Add cinnamon, nutmeg, cardamon, Jody's Asian Persuasion Rub (MeMe's Apple Pie is a great alternative), and salt and whisk until well-combined. Let simmer for 10 minutes, whisking constantly.
- Step 4: While sauce simmers; place pecans on Mesh Cooking Mat and place on recteq for 10 minutes; then remove. Remove sweet potatoes from recteq and allow to cool for 30 minutes. Once cool, remove foil and skin of potatoes.
- Step 5: Slice potato into 1/2 inch circles and layer them in a 13" by 9" baking dish that has been sprayed with non-stick spray. Pour hot sauce over potatoes and place back in recteq for 45 minutes, remove.
- Step 6: Top with pecan and marshmallow and place back into recteq for 15 minutes. Remove and serve.
