Delicate but rich, these delightful bacon-wrapped quail will be a hit for any dinner party. This simple recipe brings out the subtle flavor of the quail without overpowering them. They make a great appetizer for any party!

Instructions

  • Step 1: Debone the quail and separate the breast and leg quarters.
  • Step 2: Preheat recteq to 350°F.
  • Step 3: Season the boneless quail with the Ron's Screamin' Pig Rub.
  • Step 4: Wrap each piece of quail with 1/2 strip of bacon and place on a Mesh Cooking Mat.
  • Step 5: Cook for 30-35 minutes until the bacon is crisp and the quail is at least 165°F internal temperature.
  • Step 6: Apply BBQ sauce at the end of your cook just prior to pulling quail.
