Atomic Buffalo Bites (Armadillo Eggs)

These bite-sized bombs of cheesy goodness and smoky heat are a perfect pairing for any party. Make sure you have your favorite brews on hand, because these Atomic Buffalo Bites pack some heat.

Instructions

  • Step 1: Preheat recteq to 350°F, burning the Mesquite Pellets.
  • Step 2: Slice the jalapeños in 1/4" coins, removing seeds.
  • Step 3: Grab 2 ounces of sausage and roll into a small meatball, making a thumb print in the middle and filling with a jalapeño slice and cheddar cheese.
  • Step 4: Carefully seal the sausage and form into an egg shape.
  • Step 5: Cut the bacon in half lengthwise, wrap the slice around the sausage ball, and secure with a toothpick. Season with Ron's Screamin' Pig Rub.
  • Step 6: Place the wrapped bites on a Mesh Cooking Mat and cook for 30-35 minutes until the bacon is crisp. Brush on recteq Gourmet BBQ Sauce before completing the last five minutes of cook.
