For something just a little different, go with this incredible, recteq style Kentucky Hot Brown with turkey, bacon, and extra goodness from Colden's Freakin' Greek Rub.

Instructions

  • Step 1: Preheat recteq to 325ºF degrees.
  • Step 2: Using a sharp knife, trim away the silverskin. Season with the Colden's Freakin' Greek Rub and cook until an internal temperature of 165ºF, about 60-70 minutes.
  • Step 3: Lay the bacon out on a Mesh Cooking Mat, add to the recteq and cook for 30 minutes or until the desired level of crisp.
  • Step 4: Slice the tomatoes about 1/2 inch thick, add to a Mesh Cooking Mat and roast for about 20 minutes until some of the excess water is cooked out.
  • Step 5: In a small sauce pot, melt the butter and flour to make a roux, then add the milk and allow to simmer until thick. Once thick, remove from the grill, add the cheese, and stir until melted.
  • Step 6: When bacon is almost crisp, place the cut brioche buns over the bacon to "toast" the bread for 5 minutes. Remove from the grill and add to a platter.
  • Step 7: Slice the turkey and add to the top of the bacon, top with the roasted tomatoes, cheese sauce, and finally top with the bun lids.
