Sometimes a warm and comforting veggie curry really hits the spot! Our version is loaded up with vegetables and your favorite spices, smoked to perfection on the recteq.

Instructions

  • Step 1: Burning the recteq Ultimate Blend Pellets, preheat your recteq to 350°F. Place recteq Dutch Oven on grill and allow it to come up to temp with the grill.
  • Step 2: Add oil to recteq Dutch Oven, then add onions, peppers, garlic paste, ginger paste, curry paste, Chef John's Soul Powder, and Chef Greg's 4 Letter Rub. Mix well until all ingredients are well combined.
  • Step 3: Add chicken stock and tomato paste. Mix well until all tomato paste is well broken down.
  • Step 4: Add sweet potatoes and coconut milk. Let simmer for 45-60 minutes, until sweet potatoes are soft. Remove from recteq and serve over rice.
