Tender roasted zucchini, finished with creamy Boursin cheese and buttery toasted breadcrumbs for a flavorful baked side.
Instructions
- Step 1: Preheat recteq to 400℉.
- Step 2: Slice zucchini in 1/2 inch rounds, add to a large bowl and toss with olive oil and Chef Greg's 4 Letter Rub and Colden's Freakin' Greek Rub. Arrange the zucchini shingled in a 9 inch x 13 inch baking dish.
- Step 3: Roast in the recteq for about 30 minutes until the zucchini are tender and golden brown. Top with the crumbled Boursin cheese and butter toasted bread crumbs. Cook for an additional 5-10 minutes until the cheese is melted.
