  • 1 pound(s) Cavatappi Pasta, cooked
  • 2 ounce(s) Butter
  • 2 each Shallots, chopped
  • 1/4 cup(s) All Purpose Flour
  • 2 cup(s) Milk
  • 1/2 cup(s) Heavy Cream
  • 1/4 cup(s) Dry Sherry
  • 2 tablespoon(s) Dijon Mustard
  • 8 ounce(s) White Cheddar, shredded
  • 16 ounce(s) Butterkase Cheese, shredded
  • 1 teaspoon(s) Salt
  • 1 teaspoon(s) Black Pepper
  • 8 tablespoon(s) Parsley, chopped
  • 2 each Lobster, cooked & chopped coarse
  • 1/4 cup(s) Bread Crumbs

Tools Needed

  • Step 1: Preheat recteq to 400°F with 7 quart enameled cast iron Dutch oven.
  • Step 2: Add the butter and shallots and saute for 3-4 minutes. Add flour.
  • Step 3: Using a wire whisk, incorporate the milk, cream, and sherry, then allow to come to a simmer for 6-8 minutes.
  • Step 4: Over very low heat add the cheeses, mustard, salt, pepper, and lobster. Season to taste.
  • Step 5: Stir in the pasta and parsley.
  • Step 6: Butter or oil a 13 inch x 9 inch baking dish, add the lobster and macaroni mixture into the pan and top with the bread crumbs.
  • Step 7: Bake in the recteq for 30-35 minutes until the top is brown and crisp.
