Smoked Lobster Mac and Cheese

With the creamy combination of rich cheeses, Colden’s Freakin’ Greek Rub, Chef Greg’s 4 Letter Rub, and a touch of sherry, this delightful pasta dish will truly dominate the dinner table.
Instructions
- Step 1: Preheat recteq to 400°F with 7 quart enameled cast iron Dutch oven.
- Step 2: Add the butter and shallots and saute for 3-4 minutes. Add flour.
- Step 3: Using a wire whisk, incorporate the milk, cream, and sherry, then allow to come to a simmer for 6-8 minutes.
- Step 4: Over very low heat add the cheeses, mustard, salt, pepper, and lobster. Season to taste.
- Step 5: Stir in the pasta and parsley.
- Step 6: Butter or oil a 13 inch x 9 inch baking dish, add the lobster and macaroni mixture into the pan and top with the bread crumbs.
- Step 7: Bake in the recteq for 30-35 minutes until the top is brown and crisp.
