This maple-wrapped fish gently cooks on the recteq, steaming fish and vegetables together and infusing subtle smoky sweetness.
Instructions
- Step 1: Preheat recteq to 400℉. In a shallow baking dish, soak the maple wraps in cool water for at least 5 minutes.
- Step 2: To assemble the wrap, remove from the water, lightly towel dry excess water. In the middle of the wrap, place a few pieces of the sliced broccoli, mushrooms, and green onions. Season the fish with the Colden's Freakin' Greek Rub and the recteq's Salt-Free All Purpose Rub and place on top of the veggies. Add a few drops of olive oil on the top of the fish.
- Step 3: To secure the maple wrap, tuck the sides of the maple wrap across the top and secure with butcher's twine.
- Step 4: Add to the recteq and cook for about 15 minutes until the fish is cooke to at least 125℉ and the veggies are tender. Remove from the recteq and allow to cool before serving along a side salad or cooked grain.
