Instructions
- Step 1: Preheat recteq to 275°F.
- Step 2: Season eye of round with Ben's Heffer Dust and smoke until 135°F internal temp (about 90 minutes).
- Step 3: After the beef has been cooking for about 60 minutes, add a cast iron skillet to the recteq next to the beef to begin preheating.
- Step 4: Add the butter and flour to make a roux. Then, add the beer and allow to simmer and become thick.
- Step 5: In small amounts, add the cheese and combine until the cheese has melted and become thick.
- Step 6: Once the beef has finished cooking (135°F), slice the eye of round as thinly as possible and pile onto the toasted onion roll.
- Step 7: Top with the creamy beer cheese and enjoy!
