SmokeStone Smash Tacos (Big Mac Style)

What could be better than the convenience of griddle cooking, easy taco-style serving, and our favorite Big Mac taste?

Instructions

  • Step 1: Burning the Cherry pellets, preheat SmokeStone to Medium High heat.
  • Step 2: Divide ground beef into 10 equal portions and roll into balls. Using your fingers, smash the ball onto a tortilla shell. Press into a thin even layer across tortilla and season with Colden’s Freakin Greek Rub. Repeat process.
  • Step 3: Spray griddle lightly with high temperature oil, (such as spray avocado oil) and place tortillas on griddle with the beef side down. Make sure to smash them down with a spatula to get even caramelization.
  • Step 4: Cook for 3 minutes or until until beef is golden brown and then flip. While meat is cooking, sauté onions until translucent. Remove onion and set aside.
  • Step 5: Turn SmokeStone down to Medium Low heat. Place cheese slices on top of meat and close the lid for a minute or so until cheese melts.
  • Step 6: Remove from heat and top with onions, lettuce, and Thousand Island Dressing and serve like a taco.
