This almost effortless Bison Big Mac Tacos recipe will yield big compliments!

Instructions

  • Step 1: Burning the Oak Blend Pellets, preheat SmokeStone to MedHi heat.
  • Step 2: Divide ground bison into 10 equal portions and roll into balls. Using your fingers, smash the ball onto a tortilla shell. Press into a thin even layer across tortilla and season with Buckshot Blend Rub. Repeat with all tortillas.
  • Step 3: Spray griddle lightly with high temperature oil, (we used avocado oil), and place tortillas on griddle with the meat side down. Make sure to smash them down with a spatula to get even caramelization.
  • Step 4: Cook for 3 minutes or until until beef is golden brown and then flip. While meat is cooking, saute onions until translucent. Season with Buckshot Blend Rub, remove, and set aside.
  • Step 5: Turn SmokeStone down to medium low heat. Place cheese slices on top of meat and close the lid for 1 minute or so until cheese melts.
  • Step 6: Remove from heat and top with onions, lettuce, and Thousand Island Dressing. Fold like a taco and enjoy!

Chef Pairings

Add on a side of chips and guacamole to play up the Tex Mex flavors or go with French Fries if burgers are on your mind!
