Kabobs

  • 2 pound(s) Chicken Thighs, diced coarse
  • 12 ounce(s) Beer
  • 2 tablespoon Garlic, chopped fine
  • 2 tablespoon(s) Onion, grated
  • 2 tablespoon(s) Parsley
  • 1/4 teaspoon(s) Cayenne Pepper
  • 3 tablespoon(s) Olive Oil
  • 2 teaspoon(s) Salt
  • 2 teaspoon(s) Pepper
  • 16 ounce(s) Baby Bella Mushrooms
  • 2 tablespoon(s) Red Bell Pepper, diced coarse
  • 1 each Yellow Bell Pepper, diced coarse
  • 1 each White Onion, diced coarse
  • 1 each Pineapple, diced coarse

Tools Needed

  • Step 1: Preheat recteq to 400ºF.
  • Step 2: Cut the chicken thighs into 2 inch cubes. In a mixing bowl, combine chicken with beer, garlic, onion, parsley, cayenne pepper, olive oil, salt, and pepper. Allow to marinate for 30 minutes.
  • Step 3: Build the kabobs with the mushrooms, red pepper, yellow pepper, onion, pineapple and chicken; then repeat.
  • Step 4: Place the skewers on the grill and cook until the chicken is 165ºF and has a nice char.
