Savory Stuffed Cornish Hens

Originally from Cornwall, England, Cornish Game Hens have a special pedigree and yield extra tender meat. Grilling them on the recteq with our incredible stuffing recipe makes for an amazing final product.

Instructions

  • Step 1: Preheat the recteq to 375°F with a cast iron skillet inside.
  • Step 2: Add the oil and mushrooms to the pan, cooking for 6-8 minutes until the mushrooms are golden brown.
  • Step 3: Add the remaining vegetables and cook for 4-5 minutes until tender.
  • Step 4: In a large mixing bowl, combine the cooked vegetables with the melted butter, stuffing mix, and just enough chicken stock to hydrate the bread stuffing. Allow the mixture to cool completely.
  • Step 5: Fill each hen with 4-5 ounces of the stuffing mix and secure the stuffing by tying the legs with butcher's twine.
  • Step 6: Season the stuffed hens with olive oil and Colden's Freakin' Greek Rub.
  • Step 7: Preheat recteq to 375°F and cook the hens for 75-90 minutes until the breast meat reaches 165°F.
  • Step 8: Allow the hens to rest for 30 minutes before serving.
