Salt-Free Cast Iron Skillet Chicken

A spatchcocked chicken seasoned with recteq’s Salt-Free All Purpose Rub is seared in cast iron and finished with tender potatoes, onions, and carrots.
Instructions
- Step 1: Burning the recteq Ultimate Blend Pellets, preheat your recteq to 400°F and place a cast Iron skillet inside of grill.
- Step 2: Place chicken on cutting board and using poultry shears, spatchcock chicken.
- Step 3: Season chicken with oil and recteq's Salt-Free All Purpose Rub on both side of chicken. Allow seasoning to rest on chicken for 8-10 minutes.
- Step 4: Place chicken skin side down into cast iron skillet. Let cook for 15-20 minutes before flipping chicken over inside cast iron skillet.
- Step 5: Add potatoes, onions, and carrots to cast iron skillet around chicken. Season veggies with recteq's Salt Free All Purpose Rub. Toss and let cook for 15-20 minutes.
- Step 6: Add chicken stock to cast iron skillet and let chicken cook until chicken breast reaches an internal temp of 165°F. Remove cast iron skillet from recteq and allow to rest for 10-15 minutes before serving.
