Butter Bomb Salt Free Barbeque Chicken

Spatchcocked chicken is seasoned with recteq’s Salt Free Barbeque Rub, stuffed with a rich compound butter, and cooked on the recteq for juicy, smoky flavor and crisp skin.
Instructions
- Step 1: In a mixing bowl add soft butter and 4 tablespoons of recteq's Salt Free Barbeque Rub. Using the electric mixer blend butter and rub together.
- Step 2: Lay out a flat sheet of plastic wrap (about 8-12 inches long). Place butter mixture and place in middle of plastic wrap, so when wrapped it makes a tubular shape.
- Step 3: Roll butter mixture up in plastic wrap and place in freezer until solid.
- Step 4: Burning the recteq Ultimate Blend Pellets, preheat your recteq to 375°F.
- Step 5: Place chicken on recteq Disposable Cutting Board and spatchcock it. Remove butter from freezer and remove plastic wrap. Slice into disk and place under all chicken skin.
- Step 6: Season chicken with recteq's Salt Free Barbeque Rub and place on recteq skin side up. Cook to and internal temp of 155°F. Place butter and recteq's Salt Free Barbeque Rub in the recteq Sauce Pot, place on grill.
- Step 7: The last 10 minutes of the cook, baste the chicken when the butter mixture until chicken reaches an internal temp of 165°F.
- Step 8: Remove from recteq and allow to rest for 10 minutes before slicing.
