Buffalo Chicken Sloppy Joes

Tender ground chicken, sautéed vegetables, and a tangy buffalo sauce, all piled high on a bun with creamy bleu cheese dressing for a delicious result.
Instructions
- Step 1: Preheat your recteq to 450ºF.
- Step 2: Place a 10 inch cast iron skillet on the grill and let it heat up for 20 minutes.
- Step 3: Dice your celery, onion, carrots, and garlic. Add the olive oil to the pan and then add the vegetables, season with salt and pepper. Cook for 3-4 minutes or until they are translucent.
- Step 4: Add ground chicken and stir to mix everything together. Cook for 8-10 minutes, break up remainder of the meat, and continue to cook until the chicken is cooked through to a minimum of 165ºF .
- Step 5: Add the tomato soup, butter, and hot sauce and stir to combine. Let cook for 3-5 more minutes.
- Step 6: Pull the buffalo mixture off the grill and build the sandwiches. Add the buffalo mixture to the bottom bun, top with bleu cheese dressing, then sprinkle the bleu cheese crumble over the top, and close the bun. Enjoy!
