Instructions

  • Step 1: Burning the recteq Ultimate Blend Pellets, preheat your recteq to 335°F. Place sheet pan with hot water in pan that is half way up sheet pan.
  • Step 2: In a medium size mixing bowl, add graham crackers, brown sugar, salt and mix well. Add melted butter and mix well until all graham crackers are covered with butter.
  • Step 3: Spray spring-form pan with non stick spray, then add graham crackers to bottom of pan and press firmly into bottom and sides. Be sure that the crust is even on all sides. Set aside.
  • Step 4: Using the paddle attachment on the electric stand mixer, combine the cream cheese and sour cream until well-incorporated.
  • Step 5: Add sugar and vanilla and mix well, using rubber spatula to scrape the sides of the bowl after mixing.
  • Step 6: Add eggs and egg yolks one at a time, waiting for egg to be fully mixed before adding another one. Scrape bowl.
  • Step 7: Add pudding and cream and mix well, until mixture is smooth. Pour mixture into spring-form pan. Place red and blue food color around the batter as drops, then swirl with wooden skewer.
  • Step 8: Place spring form pan in recteq in water bath and cook for 60-70 minutes or until a toothpick can be inserted into the middle and comes out clean.
  • Step 9: Remove from recteq and allow to cool at room temp for an hour, then move it to the refrigerator for at least 4 hours before serving.
