Instructions

  • Step 1: Preheat recteq to 350°F, brew coffee and let sit and cool. Spray baking pans with non-stick spray and dust each pan with 2 tablespoons of cocoa powder. Set aside.
  • Step 2: In the bowl for the electric mixer, add flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix on low speed for 2 minutes.
  • Step 3: Add buttermilk, cooled coffee, and oil to mixer and mix well until everything is well incorporated. Add eggs one at a time, mixing between each egg.
  • Step 4: Pour batter into baking pans and place pans in recteq. Bake for 35-40 minutes until a toothpick inserted into the middle of the cake comes out clean. Remove from recteq and allow to cool for 10 minutes in the pan.
  • Step 5: Remove cake from pans and place on wire cooling rack. Allow to cool completely before adding icing. Add icing to bottom layer of cake then place top layer on and add icing to top layer. When finished, cut and serve.
