This classic Dutch Baby bakes up light, airy, and golden brown with crispy edges and a rich, buttery flavor straight from the recteq.
Instructions
- Step 1: Chef Note: The key to a perfect Dutch Baby is a screaming hot cast iron skillet. Don't open the lid while it's cooking or you'll lose that dramatic rise. The light wood-fired flavor from the recteq adds a unique twist to this breakfast classic.
- Step 2: Preheat your recteq to 425°F with a 10-inch cast iron skillet inside the grill.
- Step 3: Add the eggs, milk, flour, and vanilla extract to a blender. Blend for 30 seconds until smooth and lump-free.
- Step 4: Carefully remove the hot skillet from the grill and add the butter. Swirl until completely melted and the skillet is coated.
- Step 5: Pour the batter directly into the hot skillet over the melted butter.
- Step 6: Place the skillet back on the recteq and cook for 18-22 minutes or until the Dutch Baby is puffed, golden brown, and crispy around the edges.
- Step 7: Remove from the grill and serve immediately. Top with powdered sugar, fresh berries, maple syrup, lemon juice, or whipped cream.
