This easy and delicious zesty breakfast zucchini bread recipe is perfect for brunch, coffee, or even dessert. Get your veggies and a treat!

Instructions

  • Step 1: Preheat recteq to 350°F.
  • Step 2: In a large bowl, grate the zucchini and squeeze out the water with a towel.
  • Step 3: Combine the zucchini, eggs, cinnamon, Jody's Asian Persuasion Rub, sugar, vanilla, melted butter, walnuts, and raisins, then mix well.
  • Step 4: In a medium size bowl, combine the flour, baking soda, salt, and baking powder.
  • Step 5: Add the flour mixture to the zucchini mixture in stages, then stir to combine.
  • Step 6: Grease 2 loaf pans and divide the batter equally between them.
  • Step 7: Cook for 35-40 minutes until a wooden skewer is inserted and removed clean.
  • Step 8: Allow to rest at least 30 minutes.
