Smoked Cornbread Cakes

Instructions
- Step 1: In a large bowl, mix cornmeal, flour, sugar, baking powder, nutmeg and salt.
- Step 2: Make a well in the middle of the mixture and pour in the buttermilk, water, eggs, vanilla, and butter.
- Step 3: Mix until the mixture is smooth, similar to pancake batter consistency.
- Step 4: Place a lightly oiled cast iron skillet on to the recteq at 400°F.
- Step 5: Scoop 2 tablespoon dollops of cornbread mixture into the skillet.
- Step 6: Cook each cake for 4 minutes, flipping halfway.
