With crispy edges and soft, gooey centers, these skillet chocolate chip cookies baked on the recteq bring a delicious twist on a classic treat.

Instructions

  • Step 1: Burning the Mesquite Pellets, preheat recteq to 350°F.
  • Step 2: In a large bowl, whisk together melted butter, brown sugar, and white sugar until smooth and glossy.
  • Step 3: Add in eggs and vanilla, mixing until fully combined.
  • Step 4: In a separate bowl, whisk together flour, baking soda, and salt
  • Step 5: Slowly add the dry ingredients into the wet, mixing until a soft dough forms.
  • Step 6: Fold in chocolate chips. 
  • Step 7: Spread dough evenly in a greased cast iron skillet. Press it down with your hands or a spatula to even it out.
  • Step 8: Sprinkle a pinch of Ben’s Heffer Dust on top for that sweet-savory bite.
  • Step 9: Place skillet in your recteq.
  • Step 10: Bake for 25–30 minutes, or until the edges are golden brown and the center is just barely set (you want it gooey, trust me). For a crispier cookie, go closer to 35 minutes.
  • Step 11: Remove from recteq and let rest for 5–10 minutes—if you can wait.
