These flavorful mini taco cups are layered with seasoned ground beef, spiced refried beans, and melty cheese, all baked in crispy tortillas on your recteq for the perfect bite-sized Tex-Mex treat.
Instructions
- Step 1: Burning the recteq Ultimate Blend Pellets, preheat your recteq to 375°F. Place a cast iron skillet on recteq and allow it to come up to temp with the grill.
- Step 2: In a mixing bowl add ground beef, Ray's Loco Gringo Rub, and Chef Greg's 4 Letter Rub. Mix well.
- Step 3: Add beef to cast iron skillet and brown meat. While meat is browning, cut tortillas into smaller circles. Spray muffin pan with non-stick spray and gently place tortillas in muffin pan.
- Step 4: Add refried beans to a mixing bowl and season them with Colden's Freakin Greek Rub. Mix well until all ingredients are well incorporated.
- Step 5: Drain fat from cast iron skillet and fill tortilla cups, starting with ground beef, then refried beans, then cheese, and repeat to reach the top of tortilla.
- Step 6: Place muffin pan in recteq and cook for 12-15 minutes or until the tortillas are golden and crispy. Remove from recteq and allow to rest for 8-10 minutes before removing from muffin pan.
- Step 7: Top with sour cream, guacamole, lettuce, and jalapeños. Serve and enjoy.
