Chef Curtis is sharing one of his favorite holiday hacks. With this easy recipe you'll create two delicious products: a rich, savory garlic paste, and a smooth, flavorful garlic oil - both will be perfect for your holiday recipes.
Instructions
- Step 1: Start your recteq and set the grill to 350ºF.
- Step 2: In a small oven-safe pan combine the garlic, thyme, rosemary and black pepper. Add the olive oil, making sure that all the garlic cloves are submerged in the oil.
- Step 3: Place the dish on the smoker and cook for 30 minutes. At the 30 minute mark, check for doneness. The garlic should be floating, golden brown in color, and smash easily with a fork. It should take between 30-45 minutes.
- Step 4: When the garlic is ready, take your pan out of the smoker and let the garlic cool for at least 3 hours.
- Step 5: Remove the sprigs of thyme and rosemary from the oil and discard. Separate the oil and garlic cloves and place the garlic into a blender or food processor. Add 3 tablespoons of the garlic oil back to the garlic cloves in the blender.
- Step 6: Your garlic oil is now done. You can use the garlic oil just like you would regular olive oil in your every day cooking, and it's especially great in all of your holiday sides.
- Step 7: Hit the garlic with quick pulses in the blender until it's a smooth paste. It's now ready to use in all of your recipes.
