The perfect celebration of Autumn is delectable, creamy Pumpkin Pasta from the recteq.

Instructions

  • Step 1: Burning the recteq Ultimate Blend Pellets, preheat your recteq to 450°F and place a cast iron skillet in recteq.
  • Step 2: Once recteq is up to temp, add bacon and start to render out fat. Then add onions and carrots to cast iron and cook down until onions become translucent.
  • Step 3: Add garlic and mix into other ingredients. Cook for 4-5 minutes then add the wine. Let wine reduce until almost all of the wine has evaporated.
  • Step 4: Add nutmeg, cinnamon, sage, and red pepper flakes. Combine with other ingredients and cook for 3-5 minutes.
  • Step 5: Add pumpkin and heavy cream. Whisk into other ingredients and bring to a simmer.
  • Step 6: Add cooked noodles to cast iron and toss around in sauce until noodles are completely covered. Remove from recteq.
  • Step 7: Top with parmigiana and Chef Greg's 4 Letter Rub. Serve and enjoy.
