Grilled Watermelon Salad

Fresh Grilled Watermelon Salad is a mouth-watering addition to that protein-heavy main course!
Instructions
- Step 1: Preheat recteq to 475°F and place the Sear Kit with the raised side up inside.
- Step 2: On cutting board, cut rind off watermelon, then square the melon up by cutting sides, top and bottom. Cut 1/2 inch thick sheets, season with oil, Jody's Asian Persuasion, and Chef John's Soul Powder.
- Step 3: Place melon on the raised side of the Sear Kit and grill for 4 minutes, then rotate melon 45° and grill for another 4 minutes and remove. Cool in refrigerator for 30 minutes.
- Step 4: Cut onion in half and place on Sear Kit and grill for 10-15 minutes until onion is nicely charred. Remove and let cool in refrigerator for 15 minutes.
- Step 5: Once cooled, cut melon into 1/2 inch by 1/2 inch square chunks and add to mixing bowl. Add thin onion slices and crumbled feta to mixing bowl and toss until well combined. Top with balsamic reduction and mint before serving.
