Fried Green Tomato Towers

Crispy, golden fried green tomatoes layered with creamy pimento cheese and a kick of hot sauce create these indulgent Fried Green Tomato Towers.
Instructions
- Step 1: Burning the recteq Ultimate Blend Pellets, preheat your recteq to 425°F. Pace recteq Dutch Oven inside recteq.
- Step 2: Add shortening to recteq Dutch Oven and allow both to come up to temp.
- Step 3: While shortening is heating up, in 3 different 1/3 pans add flour to 1, then add egg wash to another 1/3 pan, and panko to another 1/3 pan. Set aside.
- Step 4: In the flour container, add Colden's Freakin' Greek Rub and Chef Greg's 4 Letter Rub and mix well.
- Step 5: Slice each tomato into 4 equal slices. Each slice will go into the flour, egg wash, panko in that order. Place on a piece of wax paper.
- Step 6: Once all tomatoes are battered, place them in batches in the recteq Dutch Oven and fry until golden brown. Remove and place on a cooking rack.
- Step 7: Place a slice of fried tomato down, top with pimento cheese and Matt's Louisiana Hot Sauce, top with another tomato and repeat with two more fried tomato slices.
