This will become your go-to summertime salad when fresh corn starts coming into season. Creamy, delicious, and colorful, it's the perfect side for any backyard BBQ.

Instructions

  • Step 1: Preheat recteq to 500ºF+.
  • Step 2: Season the corn with olive oil and Ray's Loco Gringo Rub.
  • Step 3: Grill for 15-20 minutes until the corn has a good char.
  • Step 4: Allow the corn to cool slightly, cut the kernels away from the cob, and pile into a large mixing bowl.
  • Step 5: Add the mayo, sour cream, and crema to the corn, mixing well.
  • Step 6: Top the corn salad with the lime juice and cotija cheese.
  • Step 7: Serve the salad slightly warm.
