Grilled Broccoli and Bacon Salad

This grilled broccoli salad is kicked up a notch with dried cranberries, a squeeze of lemon, and a healthy dose of Greek yogurt to make this a delicious, hearty salad. It's the perfect side-kick to any main course, hot off the grill.

Instructions

  • Step 1: Set recteq to 375°F and place the Sear Kit inside, grate side up.
  • Step 2: On the cutting board, slice broccoli heads in half from crown (top) to stem. Season with olive oil and 2 tablespoon of Ben's Heffer Dust and place cut side down on Sear Kit.
  • Step 3: Grill for 12-15 mins, then flip and cook for another 8-10 minutes. Remove and let cool.
  • Step 4: After you put broccoli on, lay the bacon flat on the Mesh Cooking Mat and grill for 20 -25 minutes until nice and crispy. Remove and let cool.
  • Step 5: In a large mixing bowl, add onions and cheddar cheese. Once broccoli and bacon have cooled, cut the crowns(tops) off the broccoli and add it to the mixing bowl, chop bacon and cranberry, add it to the mixing bowl and mix well.
  • Step 6: In a small mixing bowl add yogurt, lemon juice, Chef Greg's 4 Letter Rub, and Ben's Heffer Dust and whisk until well incorporated. Pour sauce over broccoli and mix well. Let salad set in refrigerator for at least 2 hours before serving.
