Try our Maple Pecan Spatchcock Turkey for a centerpiece-worthy main course that will set the stage for an excellent holiday meal.

Instructions

  • Step 1: Preheat recteq to 325°F.
  • Step 2: Spatchcock the turkey by cutting away the backbone of the bird. Using your hands, separate the skin from the breasts and legs/thighs of the turkey.
  • Step 3: Prepare the compound butter by adding the soft butter to a mixing bowl with the pecans, rosemary, thyme, and maple syrup.
  • Step 4: Add the compound butter under the skin of the turkey, on top of the breasts, as well as the legs and thighs. If there is any butter left, rub on the top of the skin.
  • Step 5: Season the top of the skin with Colden's Freakin' Greek Rub and cook the turkey until the breasts are 165°F, about 10-12 minutes per pound.
