Game Day Queso

It's dip season and this will become your go-to recipe. It's definitely a crowd pleaser filled with creamy cheese, spicy chorizo, and delicious smoke-flavor. 



Ingredients:

  • 1 pound ground chorizo
  • 1 cup Onion, diced
  • 1 cup Poblano, diced
  • 1 can Rotel® tomatoes
  • 8 ounces Cream cheese
  • 1 pound Velveeta® cheese
  • 2 tablespoons Ray's Loco Gringo Rub

Instructions:

  1. Preheat recteq to 400°F with a cast iron pan.
  2. Cook the chorizo for 5-6 minutes (drain excess grease if needed).
  3. Add the onions and peppers and cook for 5-6 minutes.
  4. Turn the heat down to 250°F.
  5. Add the Rotel®, Velveeta®, cream cheese, and Ray's Loco Gringo.
  6. Cook for 1 hour, stirring occasionally.

Serving Suggestion:

Beyond chips, this dip is perfect with pita chips, veggies, toasted baguette, or crackers.
