Smoked Sweet Potato S'more Pie

Sweet and crumbly graham cracker crust and marshmallow toppings make this Smoked Sweet Potato S'More Pie a hit for the whole family.

Instructions

  • Step 1: Preheat recteq to 375ºF and allow to come up to temp. Wrap potatoes in aluminum foil and place in recteq; cook until fork tender which should take about 45 minutes. Set aside and let cool.
  • Step 2: Peel skin off of potatoes, chop, and place in mixer. Add milk, and then eggs one at a time.
  • Step 3: Once well combined, add cinnamon, 2 cups of brown sugar, and vanilla. Mix well at medium speed until everything is well incorporated.
  • Step 4: In a mixing bowl, add graham crackers and 1/2 cup of brown sugar. Pour in melted butter and mix well.
  • Step 5: Pack crust into a pie pan that has been sprayed with non-stick spray. Pack evenly around sides and on bottom of pie pan.
  • Step 6: Pour sweet potato mixture over crust and place in recteq; allow to cook for 35 minutes.
  • Step 7: Sprinkle marshmallows on top of pie and place back in the recteq for 10 minutes until marshmallows are melted. Brule top of pie and serve.
