Smoked Meatballs in Marinara

Who doesn't love meatballs? Meatballs smoked up in the recteq are even more delicious, thanks to the perfect blend of Colden's Freakin' Greek, Chef Greg's 4 Letter Rub, and Ben's Heffer Dust.

Instructions

  • Step 1: Preheat recteq to 325°F. In a large mixing bowl, add beef, eggs, Ben's Heffer Dust, and Chef Greg's 4 Letter Rub. Mix well until all ingredients are well combined.
  • Step 2: Add panko to meat mixture and mix well until panko is evenly distributed throughout. Place 3 ounces of meat mixture in the palm of your hand and roll it into a ball, repeat until all beef mixture is rolled up.
  • Step 3: Place meatballs on the Mesh Cooking Mat, making sure there is some space in between them. Place Mesh Cooking Mat into the recteq and cook to an internal temperature of 145°F.
  • Step 4: While meatballs are cooking, pour marinara into cast iron skillet. Add Colden's Freakin' Greek Rub to sauce and place skillet into recteq; allow to warm up. Once meatballs are cooked, add them to the sauce and allow sauce to simmer for 10-15 minutes.
  • Step 5: Remove cast iron from recteq and top with shaved parmesan. Allow cheese to melt before serving.
