A Spooky, Spicy Halloween Night

What’s better than a spicy hot meal with an icy cold beer on an October evening? How about knowing that you can cook that meal with the swipe of an app while you are handing out candy or taking your kiddos around the neighborhood? Let us present: a Halloween Spice Guide for adding a little extra heat to your recteq cooks.
Amp Up the Spice
First off, let’s hit on spicy flavors and how to heat up your cooks! Of course, the sky is the limit when choosing seasonings to lend a spicy flavor for your favorite recipes. Besides turning to the typical choices of cayenne, chili powder, paprika, or habanero, don’t overlook more subtle flavors of ginger, cinnamon, or curry. Usually, a combination of a few different layers of flavor will give the best pop of heat to your meal. If you don’t want to play kitchen chemist, we’ve worked out the formulas for you, with Rubs that bring the flavor and the heat.
Shake on the Heat
Let’s talk Rubs! We’ve got lots for you to choose from, they are always made in the USA, and you can mix and match for the perfect, customized taste. If you really want to heat things up, our spiciest recteq Rub is Ron’s Screamin’ Pig Rub with both Habanero and Cayenne. Looking for a bold flavor with a burst of Lemon Pepper and a smidge of Cayenne? Try Chef John’s Soul Powder Rub. For southwestern taste with a hint of Chili Powder and rich, smoky Paprika go with Ray’s Loco Gringo Rub. Slightly sweeter, with some Chili Pepper and Cayenne for kicks, Rossarooski’s Honey Rib Rub is another fan favorite. Don’t forget our signature Spicy Gourmet BBQ Sauce for even more taste, whether you cook it on or add it right before serving.
Just Say “When”
Now that we’ve chosen some seasoning, when’s the best time to add it? It depends on your method of cooking. If you are slow simmering a dish (such as soups, stews, or meats with heavy sauce), the longer it cooks the seasoning and spice will continue to build. Next day leftovers will be spicier still! On the other hand, if a recipe calls for roasting, the seasoning will begin to cook off or lose strength as it progresses. That means, if you want to really highlight spicy flavors, you’ll need to add those closer to the end. For pulled pork, adding some extra rub while you are shredding the meat, right before serving, allows those tastes to really soak in and gives it a more noticeable bite of heat.
Right on the Grates
Let’s up the ante and put some fresh, spicy peppers directly on the grill! If you want to grill up some peppers, choose habaneros, chili peppers, serrano peppers, jalapenos, or even bell peppers for a sweet contrast. You will want to grill them at high heat, preferably on the Bullseye or Bullseye Deluxe. With our other models, you can still make it work by placing the peppers around the edge, where the grill is hottest, for a nice visible sear. Watch these closely because they should be ready in just a few minutes.
Spicy Recipe Rundown
Let’s get this party started with Spicy Roasted Corn & Pepper Jack Cheese Dip! Delicious pepper jack cheese, corn, scallions, and our favorite Ray’s Loco Gringo Rub makes for an amazing starter or a great topping to add to a taco bar. For a substantial snack you can’t quit we suggest Atomic Buffalo Bites; sausage, bacon, and spicy Jalapenos make this recipe irresistible. If you really want to go all in, we have two different Jalapeno Poppers recipes in our library: Jalapeno Pork Poppers or Brent Sander’s Jalapeno Poppers. Looking for a main course that brings the heat? Enter New Mexico Red Chili and Honey Ribs or Smoked Chipotle Tri-Tip. Both will give you the satisfaction of spice with all the smoky tastes you’ve got to have!
Tips for the Big Night
With Halloween coming up, we thought it would be a nice time to share some simple recipes that can cook on the recteq while your family is Trick-or-Treating around the neighborhood or handing out candy at the front door.
